Ingredients
1 medium chicken breast
2 medium onions
3 medium potatoes
2 eggs
1/2 teaspoon ground saffron
1 ccup read crumbs
Salt and powdered black pepper for seasoning
Directions:
Cook chicken breast in a glass of water along with 1 whole onion, Little salt as well as half of the amount of the ground saffron. do it over low heat till its water is almost gone. In another pot cook the potatoes and grate them while still hot. Grind together chicken and potatoes. Then put in a large mixing bowl and add in grated onion, eggs, dissolved saffron in boiling water and sprinkle with salt and black pepper. Mix well and then knead properly. Immerse your palm in a plate of bread crumbs and then take an orange sized piece off the mixture and shape into oval or round patties. Put a non-stick frying pan on heat and pour enough oil for frying. Allow till hot. Put the cutlets inside and fry them on both sides till brownish. Remove to a platter and garnish with vegetables of interest. Serve with fresh Persian bread. Bon Appetit!
